Our 2019 Apothic Cab offers the big presence of a classic Cab with a silky touch. Signature layers of blackberry compote and black currant wrap around hints of mocha and vanilla. Blending the wine with Zinfandel delivers the complexity of Cabernet with billowy tannins that glide across the palate, smooth as silk. <br><br> <b>Winemaking Notes:</b><br> We specially selected Cabernet grapes with the most intense fruit profile and the softest, most plush tannins. The fruit was destemmed with marginal crushing to gently extract color and tannins from the fruit. Portions of this wine oak aged for about 3-4 months to preserve elegant fruit character and impart subtle vanilla.

2020 Apothic Inferno is a <i>Red Wine with a Whiskey Soul.</i> Aging some of this Zinfandel-and-Merlot-led blend in whiskey barrels adds intriguing dimensions of maple and spice to Inferno’s dark, velvety-smooth layers of dried blackberries, black plum and cherry. Plush and rich on the mouth, well-integrated tannins add texture and structure while hints of toasty vanilla and cocoa linger on the long, warm finish. <br><br> <b>Viticulture Notes</b><br> We sourced fruit for our bold Inferno blend primarily from California, mainly from Lodi and the Central Valley, with a portion of the blend grown in Washington’s Horse Heaven Hills and Columbia Valley regions. California’s 2020 vintage experienced a cool, mild growing season with a heat spell in August that resulted in early ripening. In Washington, typically low rainfall and moderate temperatures yielded fruit with the vibrant acidity and layered structure that the state is known for producing. Overall, vintage 2020 grapes show concentrated, mature flavor development and incredible structure. <br><br> <b>Winemaking Notes</b><br> Grapes for Apothic Inferno were harvested and de-stemmed, then fermented for an average of four to six days in a combination of cone-sweep and upright tanks. The wine is then oak aged for three to six months, then aged an additional 60+ days in whiskey barrels, giving Apothic Inferno its unique flavor profile.
