The 2021 Apothic Red is our first daringly original blend of California-grown red grapes. Zinfandel leads the blend with silky layers of blackberry, black cherry with a hint of black pepper. Syrah and Merlot deliver undercurrents of ripe blueberry, boysenberry and a soft, plush mouthfeel. Cabernet Sauvignon adds more dimension with notes of black currant while bold tannins deliver a hint of intrigue. The finish is long and smooth with lingering notes of vanilla and mocha from the oak we selected for aging.

Our 2020 Apothic Pinot Noir is a bold, yet lighter-bodied, red wine. Bright layers of crushed raspberry and ripe cherry meet aromas of Tahitian vanilla. The mouthfeel is round and opulent, leading to a detailed, lingering finish. <br><br> <b>Viticulture Notes:</b><br> California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 grapes show vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes:</b><br> We selected Pinot Noir grapes from Lodi for their red fruit profiles and soft, approachable tannins. Syrah was blended with the Pinot Noir to complement the dark cherry flavors with soft blueberry notes. To brighten the acidity and add notes of red currant, we blended unique Graciano grapes into the wine. The grapes were destemmed with marginal crushing and cold soaked overnight to encourage extraction of the fruit’s alluring color and tannins.

Our 2021 Apothic Merlot is a silky, approachable red wine grown in California. Notes of blackberry and blueberry are underscored by hints of toasted oak and coconut. A touch of Teroldego enhances the Merlot’s untamed character with layers of boysenberry and dark chocolate. The fruit melds together seamlessly with plush tannins that pull straight through to the long finish. <br><br> <b>Winemaking & Viticulture Notes</b><br> The majority of the Merlot and Teroldego for this wine was sourced from the Lodi region of Central California. We selected Merlot grapes for their dark fruit intensity and generous tannins to create a velvety mouthfeel. Portions of this wine were oak-aged for 3-4 months to preserve elegant fruit characteristics.

Our 2021 Apothic Cab brings a silky, elegant dimension to the bold characteristics of Cabernet Sauvignon. For this wine, we blended only the softest tannin Cabernet grapes with Zinfandel to bring distinct notes of blackberry and hints of strawberry. Layers of black cherry from the Cab meld with hints of rhubarb and spice with a subtle undercurrent of vanilla and mocha from a touch of oak aging.<br><br> <b>Viticulture Notes:</b><br> California’s 2021 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Apothic 2019 Inferno is a <i>Red Wine with a Whiskey Soul</i>. Aging some of the wine in whiskey barrels adds an intriguing dimension of maple and spice to Inferno’s dark layers of black plum and blackberry. The palate intensifies with notes of dried cherry and toasty vanilla, then leads to a long, warm finish. <br><br> <b>Viticulture Notes</b><br> The 2019 growing season started later than usual in California. Spring rain and cooling temperatures extended ripening time for the grapes. As a result, the grapes ripened more slowly and developed full flavors and acidity. Harvest 2019 produced slightly lower yields of fruit with concentrated flavor and optimal balance. <br><br> <b>Winemaking Notes</b><br> Apothic Inferno is first oak aged 2-4 months, then aged an additional 60 days in whiskey barrels to give a unique flavor profile that is expressed in the bottle.

Our 2019 Apothic Crush is a luscious Red Blend brimming with notes of dark cherry and blackberry. Supple tannins deliver hints of rich caramel. Petite Sirah, Pinot Noir and Zinfandel lead the blend on the 2019 Apothic Crush, delivering a long, smooth finish. <br><br> <b>Viticulture Notes:</b><br> Vintage 2019 in California experienced cool temperatures that effectively lengthened the growing season and allowed the grapes to ripen gradually at lower sugars. Grapes from this harvest have concentrated flavor and optimal balance. <br><br> <b>Winemaking Notes:</b><br> We harvested a majority of the grapes for the 2019 Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 2-3 days, then fermented between 80° to 85° F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

The 2020 Apothic Dark is a bold red blend with daring depths of black plum, fig and blackberry with accents of boysenberry jam. Deep garnet shows in the glass, opening with aromas of black raspberry and cocoa. A plush mouthfeel offers undercurrents of black cherry with hints of licorice that pull through to a long, spice-tinged finish. <br><br> <b>Viticulture Notes</b><br> California’s 2020 growing season experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak.
