The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper. Syrah and Merlot add intriguing notes of ripe blueberry and boysenberry, while a mix of other red varieties add dimension and depth with hints of spice. Soft and plush on the palate, the long finish brings vanilla and mocha characteristics, a reflection of the selective oak aging used to enhance and support the wine’s elegant appeal. <br><br> <b>Viticulture Notes</b><br> We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2021 growing season was cool and mild, excellent conditions for developing mature, layered fruit. A heat spell in August resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.

Our 2021 Apothic Cab captures the best of Cabernet Sauvignon, bringing a silky, elegant and delicate dimension to the typically bold characteristics of the variety. This wine showcases Cabernet Sauvignon’s distinctive fruit characteristics of blueberry, blackberry jam and dark plum, supported by soft, fine tannins that add plush richness to the mouthfeel. A small addition of Zinfandel to the wine adds layers of cherry and dark fruit notes as well as a hint of spice. Subtle suggestions of vanilla linger on the smooth finish, a reflection of the wine’s selective oak aging..<br><br> <b>Viticulture Notes:</b><br>We selected the majority of the grapes for Apothic Cab from Lodi in California’s Delta region. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.<br><br> <b>Winemaking Notes:</b><br>We selected Cabernet Sauvignon grapes with the most intense fruit profile and the finest tannins, handling fruit with a soft touch in the cellar. We added a small portion of Zinfandel to the blend to complement the wine’s uniquely approachable palate and add additional dark and jammy characteristics. After harvest, fruit was destemmed with marginal crushing to gently extract color and tannins. Portions of the blend were aged on oak for two to four months to preserve elegant fruit notes and impart hints of vanilla.

2020 Apothic Inferno is a <i>Red Wine with a Whiskey Soul.</i> Aging some of this Zinfandel-and-Merlot-led blend in whiskey barrels adds intriguing dimensions of maple and spice to Inferno’s dark, velvety-smooth layers of dried blackberries, black plum and cherry. Plush and rich on the mouth, well-integrated tannins add texture and structure while hints of toasty vanilla and cocoa linger on the long, warm finish. <br><br> <b>Viticulture Notes</b><br> We sourced fruit for our bold Inferno blend primarily from California, mainly from Lodi and the Central Valley, with a portion of the blend grown in Washington’s Horse Heaven Hills and Columbia Valley regions. California’s 2020 vintage experienced a cool, mild growing season with a heat spell in August that resulted in early ripening. In Washington, typically low rainfall and moderate temperatures yielded fruit with the vibrant acidity and layered structure that the state is known for producing. Overall, vintage 2020 grapes show concentrated, mature flavor development and incredible structure. <br><br> <b>Winemaking Notes</b><br> Grapes for Apothic Inferno were harvested and de-stemmed, then fermented for an average of four to six days in a combination of cone-sweep and upright tanks. The wine is then oak aged for three to six months, then aged an additional 60+ days in whiskey barrels, giving Apothic Inferno its unique flavor profile.

Our 2021 Apothic Merlot is a silky, approachable red wine grown in California. Notes of blackberry and blueberry are underscored by hints of toasted oak and coconut. A touch of Teroldego enhances the Merlot’s untamed character with layers of boysenberry and dark chocolate. The fruit melds together seamlessly with plush tannins that pull straight through to the long finish. <br><br> <b>Winemaking & Viticulture Notes</b><br> The majority of the Merlot and Teroldego for this wine was sourced from the Lodi region of Central California. We selected Merlot grapes for their dark fruit intensity and generous tannins to create a velvety mouthfeel. Portions of this wine were oak-aged for 3-4 months to preserve elegant fruit characteristics.

Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90°F. The blend, primarily Petite Sirah and Teroldego with other dark-skinned varieties in support, was crafted to showcase a silky mouthfeel with hints of dark chocolate and spice.

With its cool evenings and warm days, Lodi is known as a producer of fragrant, concentrated, and silky textured fruit. California’s 2022 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes:</b><br> We selected Pinot Noir grapes from Lodi for their rich, ripe fruit characteristics and soft, approachable tannins. Syrah complements the dark cherry flavors with soft blueberry notes. A hint of Grenache adds intensity to the fruit expression, while the unique Graciano variety was blended in to brighten the acidity and add notes of red currant. The grapes were destemmed, lightly crushed and cold soaked overnight to encourage extraction of the fruit’s intriguing color and structure.
